To ensure that all contestants are in equal conditions to win the prize, the Organizing Committee will provide each contestant with the Espardenyà recipe, complete with the following ingredients:
The quantities correspond to one serving.
- 4 pieces of eel
- 2 pieces of rabbit
- 3 pieces of potato
- Garlic
- 1 egg
- Spicy paprika
- White pepper
- Food coloring, and Saffron
- Chili pepper
- Peanut
- Almond
- Parsley
- Bread
- Salt
- Oil
- Water
Tools: cauldron 60 cm in diameter.
Preparation of Espardenyà:
- We chop the almonds and peanuts and set them aside.
- We add oil and salt and the rabbit, frying it until golden brown.
- we infuse the saffron with hot water.
- We chop the liver with the bread and make a paste with the peanuts and almonds.
- When the rabbit is golden brown, add the garlic.
- At the same time we add the paprika along with a little water and after a while a chili pepper.
- We put the peanut and the almond.
- We add the potato.
- We add the pepper and the spicy seasonings to taste.
- We add water.
- We will put the heat on high and when it starts to boil, after about 5 minutes we will add the eel and in about 30 minutes it will be finished.
- Add the saffron and adjust the salt.
- We add the mixture with the rabbit liver and the bread and a little bit of parsley.
- And to finish the eggs with a little parsley to decorate
